Manual harvesting of grapes selected at the actual vineyard. Harvesting takes place at an ambient temperature of around 4°C.
Maceration for 30 hours with the skins.
Fermentation process in new water-toasted French casks and with daily stirring for 50 days and then every three days for four months.
This wine has a temperature sensitive laver that tells us the best temperature for drinking.
